Fresh Peach Mojitos

For the Peach Simple Syrup:

  • 1 large fresh peach
  • 1 cup sugar
  • 1 cup water

For the Cocktail:

  • 2 fresh limes juiced
  • 4 ounces white rum
  • 3 ounces peach simple syrup
  • 1/2 fresh peach 1/4 to muddle, 1/4 for garnish)
  • 3 sprigs fresh mint (about 10 leaves) (reserve 1 for garnish)
  • club soda


Peach Simple Syrup:

  • Peel and roughly chop the peach, then combine water, sugar in a pot on the stove.
  • Simmer gently until sugar is dissolved.
  • Allow to cool before running through a strainer to remove pulp.
  • Store in a mason jar in the fridge for up to two weeks.

For the Cocktail:

  • Place 1/4 of the fresh peach and 2 sprigs of mint in the bottom of a cocktail shaker.
  • Muddle well to mash the peach and release the flavors from the mint. 
  • Add the simple syrup, lime juice, and rum with a few ice cubs to the shaker.
  • Put lid on shaker and shake well.
  • Using the strainer lid on the cocktail shaker, pour mixture into a tall glass filled with ice, and top with seltzer.
  • Stir gently to combine, and garnish with wedges of peach and a sprig of mint. Enjoy!
