This one-pan meal will please your family, and it is just “fancy” enough to make for company too!

Brown chicken cutlets in olive oil in an oven-proof pan. Spread each cutlet with about 2 tbsps of your favorite pesto. (I used sun-dried tomato pesto.)

Top each piece of chicken with a couple of thick slices of fresh mozzarella and some fresh tomato slices.

Transfer the pan to a 400-degree oven and bake for 10-15 minutes.  Garnish with some thinly sliced fresh basil…

And then drizzle with some balsamic glaze. OMG, isn’t it so pretty?! And the best part? It tastes even better than it looks!

For one pan, and only 30 minutes, it just doesn’t get much better than this, friends.
