Happy Super Bowl Sunday, friends!

What’s on your agenda today for the big game?

Although I will admit that I’m not a huge footbal fan myself, lots of people in my life are, which makes me enjoy getting excited with them. Go Team!

With the busy-ness of life lately, I just didn’t have it in me to prepare a big Super Bowl spread, but you know had my back? Hello Fresh.

They have started something new recently that I have found really helpful. In addition to the regular weekly menu, they’ve offered fun options for holidays and events.

On this week’s menu, I opted in for a Game Day Buffalo Chicken Dip with Toasted Baguette, Tortilla Chips, Carrots, Cucumbers & Ranch.

It got delivered right to the house, with all of the ingredients needed to prepare a fun football spread, and I didn’t have to do any of the planning or shopping.

That’s a win for me right now, with how hectic life is.

My husband and I usually like to stay in and cook Valentine’s Dinner for two together each year.

Lucky for us, Hello Fresh also offered this wonderful “Lovely Night In” dinner package. It comes with beef tenderloin, truffle mashed potatoes, asparagus, and even a ricotta appetizer and two mini cheesecakes for dessert.

All we need to add is a bottle of wine and it’s the perfect romantic dinner for us to enjoy cooking together, without me having to plan and shop.

For New Year’s Eve, I added this amazing charcuterie board, which was well-worth the money.

Baby Evie

Less time cooking and shopping, makes more room in my life for the important things…. like this girl right here.

I mean, just look at her. She’s beautiful. But also, notice anything missing?

The feeding tube is GONE, and we’re hoping it stays gone. Right now, she’s eating well enough and gaining weight without it.

She’s up to a whole 9 pounds now. Warrior Princess.

Look who finally passed her car seat test and can now ride in a big girl seat instead of a medical car bed! What a difference one month has made! First pic is from January 4 and second pic is Feb 3.

Uncle Matthew and I went to help Evie’s mama out one day this week when her daddy had to go out of town for work.

Uncle Mattie was teaching Evie how to take a good nap apparently. 😂

All Smiles

This beauty graced us with her first smiles this week. My heart literally melted down.

You guys, this girl.

When Evelynn Irene was just 5 days old in November, doctors informed her parents that she likely would not see, hear, walk, talk, eat on her own, breath on her own, or even interact with people. Ever.

And here she is– a seeing, hearing, eating, breathing, smiling miracle.

Only time will tell what other hurdles Evie has ahead of her, but she is already a true example of God’s mercy and grace.

“May the God of hope fill you with all joy and peace as you trust in him, so that you may overflow with hope by the power of the Holy Spirit.”  Romans 15:13
