Life Lately
Summer is officially over and I went back to school full-time this week. It was nice to get to see everyone again, but also exhausting. My relaxed summer mornings with coffee on the porch have clearly taken a toll. I’m out of practice for this…
On Thursday night, we had Open House. My sweet mister came up before it started, and brought a bouquet of pretty pink roses to brighten up my tiny room at school. Then when I came home late that evening, there was another bouqet for home, too.
Now that I’m back to school, I’m pulling out my favorite recipes for making workdays go more smoothly, plus working on some new ones to share with you soon.
Monster Cookie Energy Bites, and Prep Ahead Burrito Bowls are two that I rely on. I can whip up a batch of each of these recipes on a weekend, pop them in the freezer, and I’m set for breakfast and lunch all week long. No scrambling around in the morning trying to find something to take– just grab and go.
In Case You Missed It…
This Garlic Butter and Tomatoes Pasta recipe is a new favorite. It’s delicious, is ready in only 30 minutes, is prepared in just one pot (yeah for easy clean-up!), and is family-friendly. Plus, you can customize the meat by using cooked shrimp, chicken, or even leave the sausage out completely if you prefer a meatless meal.
This is a great option for busy weeknight meals.
