Life Lately
I love summer. It’s so good to be on my own schedule, enjoying lazy mornings on the deck with coffee, and relaxing evenings with wine, and working on projects in between. <happy sigh>

This past spring, we added several bags of organic compost and gardening soil to our raised bed garden, and when we came back from vacation, the garden had grown into a jungle! It’s now producing cucumbers faster than I can keep up!


This week, I made 10 jars of pickles, have been eating cucumbers for my lunch with this delicious Dill PIckle Hummus from Trader Joe’s, and have made several batches of old-fashioned cucumbers in vinegar to eat with dinner. Anyone want any cucumbers?



In Case You Missed It…
I shared this super easy restaurant-style salsa that you can make it your slow cooker! You can use fresh tomatoes, canned, or even frozen. I still had a couple of bags of frozen tomatoes in the freezer that I wanted to get used before this year’s batch is ready. This was the perfect way to use them.

Oh wow, Niky, your garden and cucumbers look amazing! I do love homemade pickles! Speaking of pickles, I just discovered this little company at my local farm market (Cheese Filled Company).
