Life Lately

It was a busy week around here last week, but a good one.

My daughter had a birthday on Saturday, and it was the first time in years that I actually got to celebrate with her on her actual birthday. Plus, since her husband also has a February birthday, we used the occasion to have a double birthday celebration for the both of them. 🎂

Freezer Foods

In the few days before we went, I made up some freezer pans of lasagna and chicken casserole, as well as a big batch of my daughter’s favorite cookies from childhood. The kids have a lot going on in their lives right now, and I wanted to give them some options for easy, satisfying meals when they just don’t have the energy to cook. Plus, I delivered some to my son and his girlfriend, who are recovering from COVID. ☹️

Birthday Party

My sweet hubs spent his day off smoking two big pork butts on his smoker the day before our visit. To make the birthday party as easy as possible on the kids, we took the whole party to them! We brought pulled pork, buns, chips, cole slaw, Calico Baked Beans, and birthday cake! Then, there was plenty of pork left over to leave them with some for the freezer for easy meals later. Plus, we delivered some to my son, and still had some left for our freezer, too. Big batches on the smoker are the way to go.

Home Renovation Reveal

It was so fun to see their finished basement that they’ve been working on renovating for months! I’ve seen so many pics as they’ve progressed, but seeing it in person was worth the wait. These two are so talented, and did this 100% on their own. It went from an empty cement basement, to doubling their living space with a guest bedroom (we’re calling it the “parents’ suite”😂), another bathroom, a laundry room, a storage room, a full bar, a TV area, and a wine cellar!

My dad built this butcher block counter in the 70s. He gifted it to the kids when they bought this house, and they custom-built this bar to accommodate it. 💕

And look at this wine cellar! It was an empty cement space under the front stoop before. How clever of them to turn it into this functional and super cool space.

It was a great day, and just what this mama needed.

We finally have some weather in the 50s. For a short time after work, it’s been warm enough to sit on the patio in the sunshine and enjoy some fresh air. I’ve been craving this outside time– it makes such a difference in my mood and state of mind. I am so ready for gardening, and summer adventures, and Happy Hour on the patio….. <sigh>….
