Life Lately
We made a quick trip to Vegas last week to sneak in a bit of fun before my next surgery, when I’ll be stuck at home again for a while. :-(
We enjoyed the gorgeous views…


Perfect weather and great food…


Some delicious (but expensive!) cocktails, and time by the pool…


Plus we explored Red Rock Canyon in a scooter, and for the finale–we saw Garth Brooks in concert!


It was a great little getaway, and I’m sure we will be back.
In Case You Missed It…
I hate throwing food away, and do my best to use up things in our fridge to prevent food waste.
This Easy Cobbler Recipe is a great way to use up fruit that’s at the end of its shelf life. You can mix and match what you have in your fridge for some fun combos, and even half this recipe if you have a smaller amount of fruit that needs to be used.
This recipe, and of course freezing fresh fruit to be used in smoothies, are the two ways I avoid throwing away expensive produce.

Thanks for the cobbler recipe. I hate throwing food away, too. I cannot throw out the carcass from a Costco rotisserie chicken for the life of me! After I pick it clean of all the meat I can find, I go to discard the bones…and I can hear my mother whispering in my ear “there is good soup in that”. So, I always have delicious chicken soup in my upright freezer. Perfect for a quick meal, and great to have on hand when friends/neighbors are under the weather. Wishing you all the best with your upcoming surgery!
Ha, we are two peas in a pod! I do the same thing with my Costco chickens! :-)
