This Starbucks copycat Iced Oatmilk Apple Crisp Shaken Espresso is the ultimate fall drink. It combines apple brown sugar syrup with creamy oatmilk and smooth espresso for a delicious seasonal iced drink that tastes just like a slice of warm apple pie.
My Favorite Early Fall Coffee Drink
The Starbucks Iced Apple Crisp Oatmilk Shaken Espresso and the Iced Apple Crisp Oatmilk Macchiato used to be two of my favorite early fall drinks from Starbucks. They were my “go-to” orders in September before I was ready to transition to Pumpkin Spice Lattes in October.
When I learned that they weren’t coming back to the Starbucks fall menu (whyyyyyyy, Starbucks?!), I knew I had to figure out how to make my own.
This copycat recipe turned it so good, even though I’m still mad I can’t grab one from Starbucks when I’m out and about. At least I can still enjoy my fall favorites at home.
How to Make the Homemade Version of this Coffee Shop Favorite
Apple Crisp Syrup
Start by making your own apple crisp syrup. It’s so easy with just a few simple ingredients!

In a pan, combine one chopped apple, 1 cup brown sugar, 1/2 cup water, 2 cinnamon sticks, and a dash of ground cloves. Bring to a boil, and then turn it down to a simmer for 10ish minutes.
After 10 minutes or so, the syrup should be slightly thickened. Remove it from the heat and stir in a tablespoon of vanilla paste.

Then, strain the mixture into a pint mason jar (a wide-mouth jar with a twist-on lid makes this easier!) and store in the fridge until cold.
- TIPS
- Using a Granny Smith apple may impart more apple flavor to your simple syrup, but I only had a Honeycrisp, and my syrup was still very “apple-y”.
- Do NOT throw away the apples! They are delicious eaten by themselves, mashed into apple butter for toast, or used in oatmeal. Stay tuned for my favorite overnight oats recipe using these apples coming up soon!

Make Your Iced Apple Crisp Coffee

In another pint mason jar, add a tablespoon of brown sugar, a dash of cinnamon, a pinch of sea salt, and 2-3 tablespoons of your apple crisp syrup. You can add more or less syrup or brown sugar, depending on how sweet you like your drink.

In the same jar, brew two shots of espresso. I love my Nespresso espresso machine for making homemade iced coffee drinks. The Dolce and Chiaro pods for espresso shots are my favorites.

Add a scoop of ice to the espresso jar, put the lid on and shake until foamy!

Pour the espresso mixture into your favorite iced coffee glass. I have THESE.

Fill your glass about 3/4 full with ice cubes and then add your favorite oatmilk, leaving room at the top for a little bit of milk foam.

Easy Iced Apple Crisp Cold Foam
In the same jar that you brewed your espresso (who needs extra dirty dishes, right?) add a couple of tablespoons of oatmilk and just a splash of heavy cream. This makes the milk foam thicker and more “fluffy”.
If you require non-dairy milk, feel free to use oat milk only or sub almond milk or soy milk if Just know that your frothed milk will not be as fluffy. For best results, use whole milk or heavy creamy.

Add a teaspoon or so of the apple crisp syrup and a milk frother wand to foam it all up.

Add the cold foam to the top, and either a dash of ground cinnamon or a drizzle of apple crisp syrup. You could even drizzle a bit of caramel sauce on top of you fancy a Caramel Apple Iced Espresso.

Ahh, doesn’t that look delicious?!
Iced coffee lovers, rejoice! The best part? No need to rely on Starbucks for our Apple Crisp Fix!
