Skip the Greens and Make This Crunchy, Lettuce-Free Summer Salad Instead

I’m really missing big summer salads for dinner, but I’m still leery of lettuce. Nobody has time for weeks of stomach issues, right?

With ongoing food safety concerns around lettuce contamination and frequent recalls, this salad sidesteps that entire issue by eliminating the lettuce and using vegetables that are safer and easier to clean thoroughly — or better yet, grown in your own garden or purchased at a local farmers’ market.

Ingredients & What They Do

Every ingredient here is doing real work, not just filling space.

  • 2 cooked chicken breasts, chopped: This is your protein base that makes the salad a complete meal. Grilled, baked, or air-fried all work perfectly.
  • 2 ripe peaches or nectarines, cut into chunks: These bring natural sweetness and a juicy, slightly floral note that pairs beautifully with the savory elements. Make sure they’re ripe but still firm enough to hold their shape when tossed.
  • 1 avocado, diced: Creamy richness that balances the bright acidity of the dressing. Dice it just before serving to prevent browning, and make sure it’s ripe but not mushy. The avocado adds healthy fats and makes every bite more satisfying.
  • 1 large cucumber, sliced: Your crunch foundation. English cucumbers work best because they have fewer seeds and a thinner skin, which means less bitterness and more snap. If you’re using regular cucumbers, you can scoop out the seeds, or you’ll end up with excess water pooling in the bowl.
  • 1 cup cherry tomatoes, halved: Sweet, juicy, and they won’t turn to mush. Cherry or grape varieties hold their shape and add bursts of brightness without breaking down. These bring essential acidity and color to the bowl.
  • 1/4 small red onion, thinly sliced (optional): Adds sharpness and a little heat. If raw onion is too aggressive, soak the slices in cold water for five minutes, then drain. It takes the edge off without losing the flavor. This is optional, so skip it if you’re sensitive to raw onion.
  • Fresh basil to taste, chopped: Herbs aren’t optional. They bring a pop of freshness that makes the whole thing feel alive. Basil adds an aromatic, slightly sweet quality that complements both the fruit and the balsamic dressing beautifully.
  • 1/2 cup walnuts, roughly chopped: These add crunch, earthiness, and healthy omega-3s. Toasting them for a few minutes in a dry pan will bring out their flavor even more, but they’re excellent raw too. The walnuts give textural contrast and make the salad more substantial.
  • 1/2 cup balsamic dressing: This is your flavor base. The tanginess of balsamic cuts through the richness of the avocado and chicken while complementing the sweetness of the peaches.
  • 2 tablespoons olive oil: This coats everything and carries the other flavors. Use good olive oil, the kind you’d dip bread into. It matters here and adds body to the dressing.
  • 1 tablespoon honey: Just enough to round out the acid and keep the dressing from being one-note sour. You’re not making this sweet; you’re balancing it. The honey also helps the dressing cling to the ingredients.
  • Salt & pepper to taste: Don’t skip the salt. Vegetables and proteins need more than you think. Taste as you go and adjust until everything pops.

Customize It

Another great thing about this salad is that it is highly customizable. I’m not a fan of raw onions, so I left them out of my salad.

Got other veggies in the garden or fridge that you want to use? Bell peppers or sliced radishes would also add a nice crunch.

Peaches and nectarines out of season? Apples or pears are delicious in salads, too!

No basil? Mint would be excellent as well.

Don’t like walnuts? Use almonds instead.

Don’t be afraid to make adjustments to your own tastes or to what you have on hand.

Ingredients

  • Salad:
  • 2 cooked chicken breasts, sliced or chopped
  • 2 ripe peaches or nectarines, chunked
  • 1 large avocado, diced
  • 1/2 cup walnuts, roughly chopped
  • 1 large cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 of a small red onion, thinly sliced
  • Fresh basil, chopped
  • Honey-Balsamic Dressing:
  • 1/4 cup balsamic vinegar
  • 2 Tablespoons olive oil
  • 1 Tablespoon honey
  • salt & pepper to taste

Instructions

  1. Season chicken breasts with salt & pepper, then cook or grill the chicken to an internal temp of 165 degrees. Let it rest before slicing or chopping. (I used my air fryer to cook my chicken.)
  2. Combine the peaches, avocado, cucumber, tomatoes, red onion, and basil.
  3. Add the chicken to the top and sprinkle with the walnuts.
  4. Whisk (or shake in a jar) the balsamic, olive oil, honey, and salt and pepper.
  5. Pour over the salad and gently toss so you don't mash the avocado or peaches.
  6. Serve immediately.
