This Farmhouse Apple Fritter Bread with Cider Glaze was inspired by a trip to the apple orchard. A buttery, fluffy white cake loaf filled with apple chunks, and layered with a brown sugar and cinnamon streusel. It’s perfect for breakfast, brunch, or a snack with your coffee.
I love apple season. There are so many delicious varieties of apples. Honeycrisp are my all-time favorite, but I love trying different varieties, too.
Last year, we went to a local apple orchard, and picked several varieties that were new to me. We came home with a ton of apples, which got me busy thinking of ways to use them. Farmhouse Apple Fritter Bread with Cider Glaze was the tasty result!
Apple Fritter Donuts
My dad always enjoyed his donuts. In his last few months, when I was doing a lot of his grocery shopping for him, his list always included donuts. Sometimes it just said “donuts”, and sometimes it contained a bit more detail.
I’ve saved a few of his handwritten grocery lists, because they made me laugh. One time he wrote:
-Donuts. A bunch. 😂
Another time he wrote:
–Donuts. No cream inside. Got it, Dad.
And yet another time:
–Donuts. The good kind. 😂
When I asked for clarification about what “the good kind” meant, he said, “I like apple fritters”. Okay, apple fritters it is.
On future lists, he then often wrote:
–Donuts–Apple Fritters. ❤️ 🥰
This past weekend, when I finally got around to turning this idea into a recipe, I was thinking about my dad’s funny notes, and laughing to myself again. ❤️
How to Make Farmhouse Apple Fritter Bread with Cider Glaze
The Apple Fillng
You need two large apples, of any variety. I used Gala because they were on sale, but any variety would be great in here.
Cut them into small cubes and then sprinkle with cinnamon and sugar. Set aside.
Combine all the ingredients for the batter, and beat with your mixer until fluffy. This ends up being a delicious white and fluffy cake base for your fritter bread.
Pour half the batter into a loaf pan that has been sprayed with cooking spray.
Add a layer of the cinnamon & sugar apples.
In another bowl, mix together the indredients for the streusel. Sprinkle half of this mixture over the apple filling in the loaf pan.
Add the rest of the batter, to form the next layer.
Spread it out evenly, completely covering the bottom layers. Then, add the rest of the apples, followed by the rest of the streusel.
Bake in a 350 degree oven for about 50 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool for about 15 minutes, before removing from pan.
The Apple Cider Glaze
This glaze adds another round of cinnamon-y apple flavor to the bread. Mix 1 cup powdered sugar with enough apple cider to make a thick glaze. I mixed mine in a pint mason jar.
When loaf has completely cooled, drizzle glaze over the top.
You end up with two layers of buttery cake, a center filling of apples and streusel, even more apples and streusel on the top, and a lucious cider glaze drizzled over the whole thing.
This makes such a good breakfast or brunch treat, a dessert, or an afternoon snack.
It keeps well in an airtight counter for several days. My husband took a slice to work to have with his mid-morning coffee break all week long.
Farmhouse Apple Fritter Bread
For the Streusel:
- ⅓ cup brown sugar
- 1 ½ tsp cinnamon
For the Bread Batter:
- ½ cup butter softened
- ⅔ cup granulated sugar
- 2 large eggs
- 1 ½ tsp vanilla
- 1½ cups all-purpose flour
- 1¾ tsp baking powder
- ½ cup milk
For the Apple Filling:
- 2 large apples peeled & chopped in small cubes
- 2 tbsp granulated sugar
- 1 tsp cinnamon
For the Cider Glaze:
- 1 cup powdered sugar
- 5-6 tbsp apple cider add cider one tablespoon at a time, until glaze is able to be drizzled over top of loaf, but not too thin or runny
- Preheat oven to 350 degrees. Spray a 9×5-inch loaf pan with non-stick spray.
- Mix ⅓ cup brown sugar and 1 ½ teaspoon cinnamon together in a bowl. Set aside.
- Combine 1 ½ cups flour and 1 ¾ teaspoons baking powder in another bowl and set aside.
- In your mixing bowl, beat together ⅔ cup granulated sugar, and ½ cup softened butter until smooth and creamy.
- Add 2 eggs to mixer,one at a time, until blended. Then add and 1 ½ teaspoons vanilla extract and mix.
- Add flour mixture into creamed butter mixture and blend well.
- Mix ½ cup of milk into batter until smooth.
- Pour half the batter into sprayed loaf pan. Sprinkle chopped apples with cinnamon and sugar and mix well, before spreading half on top of the batter layer.
- Sprinkle half the brown sugar/cinnamon streusel on top of the apple layer.
- Repeat this process all again with second half of batter, apples, and streusel on top.
- Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50 minutes.
- Let loaf cool in pan for about 15 minutes before gently turning over to remove. Let cool on wire rack for about 30 minutes more before drizzling with apple cider glaze.
- Store in an airtight container for several days.

I have this handy apple corer and peeler. If I am just doing a couple of apples, I use my paring knife, but if I’m doing a lot, like for an apple pie, this works so well!
