Caramel Chex Snack Mix with Nuts

This Chex Caramel Snack Mix with Nuts is a family favorite. My mom made a version of this when I was growing up and the whole family always gobbled it up!

I’m using the same basic recipe she used, but I mixed it up a bit by using mixed nuts instead of just almonds and pecans.

It’s delicious no matter what variety of Chex Cereal you use, or what kind of nuts. Get creative and customize it to your liking.

The recipe calls for one 12-ounce box of cereal, but I wanted a mixture of both Rice Chex and Corn Chex, so I bought two boxes. Now I will have enough to make another batch with the second half of each box.

One can of Planters Mixed Nuts is just about the perfect amount for one batch of this recipe. I bought two cans, so I can use the second one with my next batch. I got the salted nuts, because we love a sweet & salty combo around here, but you can choose the unsalted or lightly salted if you prefer.

This recipe really could not be more simple. You may find yourself making multiple batches during the holiday season. It’s portable and perfect for family gatherings, holiday parties, and football watching!

Step 1

While the oven preheats to 275 degrees, lightly spray a roasting pan with nonstick spray.

Then, in a saucepan, mix the brown sugar, butter, and corn syrup. Boil for two minutes, stirring constantly.

Remove from the heat and add one teaspoon of pure vanilla extract. You could also add a teaspoon of cinnamon if you feel particularly festive!

Step 2

In the greased roasting pan, combine the cereal and mixed nuts. Pour the butter & sugar mixture over the cereal and nuts, and mix to combine.

Bake for one hour, stirring every 15 minutes.

Remove the snack mix from the oven and carefully spoon it onto waxed paper to cool. After it cools a bit, gently break any big lumps into smaller pieces.

This is such a great snack mix to take to holiday gatherings or to set out for snacking while watching the big game.

Be sure to store your snack mix in an airtight container, or divide it up into small cellophane snack bags, zipper bags, mason jars, or other cute holiday containers for gift-giving. Tie it with a pretty bow and you’ll be very popular with your friends and family!

Ingredients

  • ½ cup butter
  • ¾ cup white corn syrup
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 cups mixed nuts
  • 1 (12 ounce) box Chex cereal (I used half corn & half rice)

Instructions

    1. Preheat the oven to 275 degrees. Lightly grease a large roasting pan.

    2. Mix brown sugar, butter, and corn syrup in a saucepan and bring to a boil. Boil 2 minutes, stirring constantly. Remove from heat and stir in 1 teaspoon of pure vanilla extract.

    3. Add cereal and mixed nuts to prepared roasting pan.

    4. Pour butter/sugar mixture over cereal and nuts and mix until well coated.

    5. Bake for 1 hour, stirring every 15 minutes.

    6. Remove from the oven and spoon onto waxed paper to cool. Store in airtight containers.

Notes

This recipe is so flexible. Simply use your favorite variety of Chex cereal and any kind of nuts you prefer. Just be sure to follow the same ratios and you can create your own custom snack mix!
