These Campfire Foil Dinners and S’mores Martinis are perfect for camping… or “camping”. 😂
We went “camping”! Sort of….
Okay, full disclosure…I’ve had this post partially ready for quite some time. Like, since April. 😳. We planned our “camping” adventure, and then didn’t quite follow through on our whole plan. I kept thinking I’d post this when we finally did.
But, here it is July, and that hasn’t happened, so I’m gonna just go ahead and share this with you now. Mainly because it includes S’mores Martinis, and I don’t want to deprive you of that another day longer. Everyone needs S’mores Martinis in their life.
Let’s Go Camping!
Back in April, most of us were still in full-on quarantine mode with stay-at-home orders and such. I literally was not leaving the house, like, at all (I’m still very, very selective about where I go, but maybe not quite as limited as April).
Anyway, back in April, even campgrounds were still closed, but that got my husband and I thinking…. camping sounds fun… we can just “camp” at home, right?
Not that we are actual real campers or anything. I haven’t been camping since I was a child, and I’m pretty sure my husband hasn’t since Boy Scout camp. But hey, in the moment, it seemed like a good idea….
At first, we discussed pitching hubby’s old Boy Scout tent in the backyard. And then I remembered all the creatures that I frequently capture on the cameras out there…. so yeah, no to that idea.
Back to the drawing board…
“Our screened porch is basically a “tent”, right?”
“Yes! Let’s camp in the screen porch! Perfect!”
Okay, we had a plan!
Campfire Foil Dinners and S’mores Martinis
I got all excited about our “camping” theme, and added ingredients to our grocery pick-up order for campfire foil dinners! And not just any foil packet dinner— Cilantro-Lime Shrimp Foil Dinner! Yassssss!
Like camping, I haven’t had a foil packet dinner since I was a kid. We’d camp in a little pop-up camper that my parents had, and sometimes we’d have foil packet dinners that always consisted of the same thing: a burger patty, sliced potatoes, and sliced carrots.
Looking back, they really weren’t that good. Burgers don’t cook particularly well in a foil packet. 😖 They don’t brown, and all your veggies end up floating in a puddle of grease. I think as kids, we liked them more for the novelty of them.
BUT, these Cilantro-Lime Shrimp Foil Packets are definitely a cut above the old greasy burger packets! These ingredients steam nicely in the foil and you end up with something way too fancy to have been produced on a campfire. Or grill. Or even your oven if you want.
Cilantro-Lime Shrimp Campfire Foil Packets
Slice up some zucchini into little rounds.

Slice your corn cobs in rounds as well, drizzle with olive oil, and add your seasonings.

Toss in your peeled and deveined shrimp, fresh cilantro, and some lime slices.
Divide evenly between two large sheets of foil.
Drop a few pats of butter on top of each one.

Seal it up tightly by rolling and folding all the edges.

Toss it on the grill or campfire.

Now that is not your typical camping meal!


Cilantro-Lime Shrimp Foil Packet Dinner
Ingredients
- ½ lbs medium shrimp, peeled and deveined
- 2 ears corn quartered
- 1 small zucchini sliced in circles or half moons
- 1 clove garlic
- 1 tsp cumin
- ½ tsp crushed red pepper flakes
- 2 tbsp freshly chopped cilantro
- Extra-virgin olive oil for drizzling
- salt to taste
- freshly ground black pepper to taste
- 1 lime sliced into circles
- 1 tbsp butter
Instructions
- In a large bowl, combine shrimp, corn, zucchini, garlic, cumin, red pepper flakes, and cilantro. Drizzle with olive oil, season with salt and pepper, and toss until combined.
- Lay out four pieces of aluminum foil. Divide shrimp mixture between foil, and top each with a pat of butter and lime slices. Fold packets shut to seal tightly.
- Heat grill to high. Add shrimp packs and grill until shrimp is pink, about 10 minutes.
- Can also be cooked on a campfire!
- Open foil packets carefully, as steam will be released. Can be eaten directly from foil packets, or moved to a plate to serve.
Campfire Cheesy Potato Foil Packets
The Cilantro-Lime Shrimp was delicious on its own, but if you want a side to accompany it, these Campfire Cheesy Potato Packets are so easy!
Simply chop up a couple of potatoes into 1-inch cubes.
Toss with some olive oil and seasonings, before sealing in foil and cooking over the campfire or grill until tender.

Right at the very end, you add two kinds of cheese and cook a bit longer until melty and gooey!


Cheesy Potato Campfire Foil Packets
Ingredients
- 2-3 potatoes cut into 1-inch cubes
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp crushed red pepper flakes (optional–if you like a bit of spice)
- salt & pepper to taste
- ¾ cup mozzarella cheese shredded
- ¼ cup parmesan cheese grated
Instructions
- Preheat grill to medium-high, or preheat the oven to 425º. Or place on outer edge of campfire, being careful not to let burn.
- In a medium-sized bowl, toss potatoes with olive oil, garlic powder, and oregano and season with salt and pepper. Add red pepper flakes, if using.
- Divide potatoes between two large foil pieces, then fold the foil packets crosswise to completely cover the potatoes. Roll the top and bottom edges to seal them closed.
- Place foil packets on the grill and cook until just cooked through, 10 to 15 minutes. (Or transfer to the oven and bake about 15 minutes.). Campfire cooking times will vary. You can open the foil packet to test the softness of the potatoes, and then reseal to continue cooking, if needed.
- Unwrap the foil packets and sprinkle both types of cheese on top of the potatoes. Fold foil back over the potatoes and cook until cheese is melty, about 3 to 5 minutes.
- Allow to cool slightly before unsealing and serving.
Dinner’s Ready!
After both of our foil packets were done, we plated them up, and sat down next to our “campfire” to eat.

Lounging by the Campfire…
After dinner, we relaxed for awhile next to the “campfire”. Since it was April, it was still chilly enough that the warmth of the fire was so cozy.

We were treated to some distant fireworks over the pasture, which was very unexpected in April, and added an element to our camp-out that made it feel even more special. ❣️

Confession…
Okay, I have a confession to make. As we sipped our wine next to the warm fire and watched the fireworks in the distance, we both started getting sleepy. We hadn’t yet blown up the air mattress for the screen porch, and all of a sudden, the appeal of our own warm and comfy bed won out, and we bailed on the screen porch idea. 🤣
We also had a fun dessert planned, but we were both still full, and now tired, so we decided to extend the camp-out and wait until the next night to make our dessert and sleep in the screened porch. Off to bed (in our actual bed) we went.
Dessert!
If you loved S’mores as a kid (or still do!) this grown up S’mores Martini is for you!
It calls for marshmallow vodka, which you can buy in a bottle at the store, OR you can make your own–which is so easy and so good!
Marshmallow Infused Vodka
Just pour some plain vodka into a mason jar (I used a pint-sized jar for this, and filled it about half-way full with vodka).
Chop up 4 or 5 large marshmallows, and plop them in the vodka.
Tightly close the lid, and shake gently. Place in fridge for several hours or overnight.
Strain out the marshmallow chunks and it’s ready to use!

Toasted S’mores Martinis
To make the martinis, mix Godiva Chocolate Liqueur, marshmallow vodka, and heavy cream in a cocktail shaker.

Pour into two martini glasses that have been rimmed with chocolate syrup and graham cracker crumbs.

Top with a toasted marshmallow, and you’re done!

You guys, this was decadent and tastes just like a real s’more. You really need to try this one— you won’t be disappointed.



Toasted S’mores Martinis
Ingredients
- 2 oz Godiva Chocolate liqueur dark or milk chocolate, your choice
- 1 oz marshmallow vodka
- 1 oz heavy cream
- Hershey's chocolate syrup & crushed graham cracker crumbs to coat the rims
- 2 whole marshmallows to toast for garnish
Instructions
- Dip the rim of both martini glasses in the Hershey's syrup and then in the crushed graham cracker.
- In a cocktail shaker with a little bit of ice, add the chocolate liqueur, marshmallow vodka, and heavy cream.
- With the shaker lid on, shake vigorously. Pour evenly into 2 martini glasses.
- Place each marshmallow on a bamboo stick as a skewer.
- Carefully brown the marshmallow over your campfire or open flame.
- Lay the bamboo stick with marshmallow across the rim of your glasses for garnish.
- Cheers!
Okay, another confession…
We had our camping “dessert” on night 2, and we fully intended to sleep in the screen porch. But then we didn’t.
“We might get cold…”
“With no curtains, the sun will wake us up awfully early….”
“The air mattress isn’t as comfy as our Tempur-Pedic…”
“The frogs are pretty loud tonight…” 🤣 🐸
Yeah, I don’t think we are cut out for camping. Or even “camping”.
But, even so, we still enjoyed some elements of camping, and it gave us a fun “adventure” during quarantine.
Maybe we will try camping again sometime. You know, without the actual camping part.
