This BLT Pizza will remind you of the classic Bacon, Lettuce and Tomato sandwich that we all love, just in pizza format! It’s a great way to keep using all those fresh garden tomatoes that are everywhere right now, plus it’s perfect for a quick dinner on a busy evening.
Getting Back into a Routine…
With so many of us heading back to school right now, we really need to up our game, as far as quick and easy dinners go. I know that I, for one, am out of practice after so many months of working from home! A morning commute, having to pack my lunch, and being away from the house all day are things I haven’t done in a while.
I’m clearly out of practice. On Day 1 back at school for meetings, I forgot my breakfast and my coffee. And also my purse. So I couldn’t even stop and buy a coffee. It was a rough morning….
Day 2 went better, but on Day 3, I somehow got to work with a contact in one eye only. On a day when we were doing computer training all day. I’m sure I looked like a pirate, holding one eye shut and trying to focus on my computer out of the other. You can’t make this stuff up, people.
See what I mean? I’m clearly struggling, so I need dinners right now that are simple and quick to put together. This BLT Pizza is definitely both. Plus it’s so good, which makes it a win-win.
My garden is churning out the red, ripe tomatoes right now, so I’m pulling out all my tomato-y recipes to use them up! Really, any kind of tomatoes will work for this. Use whatever you have growing in your garden, or whatever is on sale at the market.
Roast the Tomatoes
You don’t want your BLT Pizza to be too watery, so it works best to roast the tomatoes prior to assembling your pizza.
Just slice them, and lay them out in a single layer on a baking sheet lined with parchment paper (or foil), and drizzled with olive oil. Drizzle a bit more oil on top, and sprinkle with salt and pepper.
Roast in a 400 degree oven for about 20 minutes, or until a good amount of the moisture is gone. Roasting also concentrates the flavor, making your tomatoes extra delicious and sweet.
You gotta have mayo on a BLT, right? This sauce has that part covered! In a small bowl, mix together the mayonnaise, chives, oil and garlic. This is your pizza sauce.
Although making your own pizza dough is super simple, and takes only a few pantry ingredients, take a helping hand if you need it. This will still be delicious if you use a purchased crust! We all need to practice some grace right now during these trying times. There’s no shame in taking the easy route.
If you’re using raw dough, pre-bake your crust a few minutes before spreading with the mayo mixture. Since your bacon is pre-cooked and your tomatoes have been roasted, the final baking stage only needs enough time to heat everything through and melt the cheese.
If you’re using a pre-made crust, you’re ready to go with the sauce and toppings!
Sprinkle the mozzarella cheese on top of the mayo sauce.
Use any kind of bacon you prefer for this. We buy the big packs of pre-cooked bacon from Costco, and keep them in the freezer. It’s so easy to just pull out the number of slices we want and they are ready to use!
If you’re using raw bacon, you will want to fry it, then cut into pieces before putting on your pizza.
Top with Roasted Tomatoes and Bake
Finally, arrange your roasted tomatoes on top and bake in your 400 degree oven for about another 10 minutes.
Watch carefully. You’re just waiting for it to heat through, melt the cheese, and evenly brown the edges of the crust.
Pizza Stone & Cutter
I always use my well-loved pizza stone to bake my pizzas in the oven, if we aren’t grilling them outside. I’ve had my stone for years, and by now it’s well-seasoned and a lovely shade of dark brown. Nothing sticks to it! If you don’t have a pizza stone, but love making pizzas at home, you might want to consider one. They hold the heat nicely, and allow your crust to get such a delicious crispness to it, rather than the sogginess that you can get from a pizza pan.
I have a round pizza wheel that I use for cutting sometimes, but for pizzas like this, where the roasted tomatoes are a bit fragile, I prefer this rocker-style cutter. It allows you to press down from the top, and keeps all the pizza toppings from sliding, like sometimes happens with my pizza wheel cutter.
Top with Shredded Lettuce
I used Romaine, but Iceberg is fine, or even Arugula would be great! Top with the greens of your choice after the pizza is out of the oven. I usually just allow people to top their own slices with lettuce, so they can have as much or little as they prefer. Also, if you have leftovers, it reheats better without the lettuce.
Serve it Up!
You can serve this with a green salad on the side, but if you are really trying to keep things simple, this already has the veggie side dish built right in. It doesn’t get much easier than that!
This is the kind of summer supper that’s meant for carrying outside. It’s very portable. And if you have an amazing hubby like I do, he’ll make you a Mule to go with it. 😄
- 1 pizza crust
- 1 pound tomatoes cut into 1/4-inch-thick slices
- ¾ tsp black pepper
- ⅓ cup mayonaise
- 1 tbsp olive oil
- 1 tbsp chives minced
- 2 cloves fresh garlic diced
- 8 slices bacon cooked
- 1½ cups mozzarella cheese
- shredded lettuce
- Place a pizza stone on bottom oven rack. Preheat oven to 400°.
- Arrange tomato slices on a parchment-lined baking sheet; sprinkle with salt and pepper. Place baking sheet directly on pizza stone. Roast tomatoes at 400° for 20 minutes or until a good amount of the juice as evaporated . Remove tomatoes; keep stone in oven.
- In a small bowl, mix the mayo, oil, chives, and garlic.
- With floured hands, pat pizza dough into a 10-inch circle and transfer to preheated pizza stone. Bake at 400° for 8 minutes. If you are using a pre-made crust, omit this step.
- Remove pizza stone with crust from oven. Brush mayo mixture over crust, leaving a 1-inch border; top with tomatoes and bacon and cheese.
- Bake 10 minutes more, or until cheese melts and crust browns. Top with shredded lettuce. and cut into slices.
