Sundays on Silverado #54

Sorry for the delay in getting this morning’s Sundays on Silverado up. I had it scheduled to post at 12:00 PM instead of AM. Can you tell my brain is already starting to fill up with back-to-school stuff. Lord help me.

Life Lately

It was my last week of summer vacation this past week, and we tried to cram as much into it as possible.

So Many Tomatoes…

We spent one whole day canning our bumper crop of tomatoes. There were so many, we had to call for backup, so my mother-in-law came over to lend a hand.

After 8 hours in the kitchen, we ended up with all this…

  • 4 pints of salsa
  • 4 half pints of roasted tomato pizza sauce
  • 4 pints of pasta sauce
  • 4 pints of Bloody Mary mixer
  • 2 quarts of V8 juice
  • 4 quarter pints of cherry tomato jam

Have you ever had Cherry Tomato Jam. Oh my word. On a burger, it’s like a thicker, sweeter ketchup. With a homemade dill pickle on the side, it doesn’t get much better for a simple summer supper. And since we canned tomato jam and pickles, we can have a taste of summer even after the snow falls.

Of course, we still have more tomatoes coming from the garden even after all that canning. Caprese is my favorite way to eat them fresh. Who else loves Caprese?

More Projects…

Working on projects is like an escape for me. And in the fall, when the weather is perfection, I love to spend a beautiful Saturday outside with a coffee cup in one hand and a paint brush in the other.

I’ve been on the lookout for an antique buffet with six curvy legs like this for awhile now, so when this one popped up on Marketplace, we didn’t waste any time making a trip to check it out. Happily, it came home with us, and I can’t wait to get started on the makeover later this fall.

R&R

We made sure to squeeze in some R&R this week too, and thankfully the weather finally gave us a break from the relentless heat and humidity. Yesterday was pure weather perfection, so we visited our favorite Mexican restaurant for a Margarita flight on the patio.

This is the same restaurant that inspired me to make my own Margarita Flight last year, remember? I need to do that again…

In Case You Missed It…

We cooked this Creamy Tuscan Chicken with Cherry Tomatoes recently for dinner in our quest to keep using all those tomatoes up. It was so good that I’m sure it will become a regular on our menu.
