Last weekend, we had lunch out on the patio of a Mexican restaurant with my kids while they were in town. It was an absolutely beautiful day, and the first time we had eaten at a restaurant since last March.
Although I was nervous at first, I ended up feeling really relaxed, because the restaurant did a great job of spacing the tables really far apart, and requiring masks anytime you were not sitting at your table. Plus, I have no doubt tequila aided in the relaxation. 😂
The waiter told us the margarita flights were their specialty, so of course we had to try them. We ended up ordering a different flight for each couple to share. Mark and I shared one called “Midwestern Sunset”. It was so good!
Make Your Own at Home
Fast forward a few days, and I was on my drive home from another stressful day of work. I mean, all days are pretty stressful right now when you work in a middle school of 1000 kids during a global pandemic. Just sayin’….
Anyway, on my drive home I was thinking about what type of cocktail I was going to make myself. (No judgement please….because, teacher+pandemic.)
“Something fruity sounds good,” I thought.
“Oh, something with watermelon sounds devine right now. I could stop at the local farm stand that I drive right past every day on my way home and get one…”
“Nah, too tired. Hmmm… I still have a lot of frozen strawberries in my freezer. I could try to make something strawberry-y. Yeah, that’s it. That’s what I’ll do.”

Frozen Fruit for the Win
I pulled in the driveway the exact same time as my hubby. I told him I was going to make us a delicious fruity cocktail and we could sit outside in the sun and decompress.
When I opened up the freezer, I saw not only the frozen strawberries, but also frozen raspberries, blueberries, and peaches, too. Suddenly, the tequila flights from last weekend popped into my head and an idea was born! I was going to make my own margarita flights!
Make the Fruit Juice
I simply defrosted all 4 kinds of fruit in separate bowls in the microwave until soft. Then, I pushed each kind of fruit, one at a time, through a fine mesh strainer, to separate the pulp from the juice.
I diiscarded the pulp, and ended up with 4 flavors of fresh fruit juice.
Make a Batch of Fresh Lime Margaritas
This is the recipe we always use for margaritas. While I was pressing the fruit juices, hubs mixed up a batch of these.
The BEST Fresh Lime Margaritas on the Rocks
- 6 oz lime juice fresh squeezed
- 4 oz tequila
- 2 oz triple sec
- 2 oz simple syrup
- salt/sugar mixture for the rim
- Rub rim of margarita glasses with a lime wedge to wet, then dip rim in a mixture of equal parts salt and sugar.
- Fill glasses with crushed ice.
- Add tequila, triple sec, lime juice and simple syrup to a cocktail mixer filled with ice and shake vigorously.
- Pour over crushed ice in glasses. Done!
Fruit Juice Over Ice
Next, we rimmed four rocks glasses with salt/sugar, then fill them with crushed ice. We poured one of the pressed fruit juices into each glass, filling it about 1/4 full.
Then, we gently poured in the fresh lime margarita mixture, to fill the remainder of the glasses.
I garnished each class with a fresh lime circle. I served our cocktails on a long platter, but you could even use a cutting board to create your flight.
Once again, my favorite repositionable chalkboard labels came in handy to label each flavor of margarita in the flight.

Not only were they incredibly beautiful and colorful, they were cold and fruity with just the right amount of tartness from the limes.
